Remote IT monitoring of cold storage should be discussed with the local council environmental health officer. Completed records must be kept onsite and available to an authorised officer. Staff must be able to access applicable records when the responsible person is absent. The Food Safety Supervisor must regularly review records. Every completed record must be retained for two years from the date it was made.
